The grapes are harvested in Aÿ, Marne Valley, Cotes des Blancs, and Montagne de Reims, with over 80% of the grapes coming from vineyards that are rated Premier or Grand Cru. For many years the company has employed a policy of durable viticulture, cutting down on the use of chemicals, reducing yields and increasing grape quality.

The harvest usually takes place over a 10-day period, generally between mid-September and mid-October and the grapes are hand harvested, with careful attention to ripeness and health of the grapes.

The grapes are pressed using automatic and traditional Coquard basket presses, and only the first press must, cuvée, is used. The wine is fermented in small, 10,000 litre tanks, with each plot being vinified separately, at between 16 & 18 degrees centigrade for two weeks; all the wine undergoes malo-lactic fermentation.

After the assemblage, which can include up to 40 different growths and between 20% & 40% reserve wines, the wines are then left to age for around 3 years. Brut Classic represents the distinctive house style of elegance and finesse, which has made Deutz one of the most respected of all Champagne houses.

This non-vintage Champagne is matured according to traditional methods from a blend of several vintages from twenty of the best crus until it reaches a perfect balance of flavour.

Tasting Notes
The colour of the wine is an intense gold with fine effervescence that signifies long maturation on the lees. On the nose, the wine initially displays noted of hawthorn and white flowers, which are followed by aromas of toast, marzipan and ripe pears. On the palate, the wine is full-bodies and elegant with the freshness of Chardonnay and richness of Pinot Noir. Overall, the wine is well-rounded with a fruity finish.
