The vineyards of Veneto are generally sloped and hilly with medium clay soils. Fruit from Villa Jolanda’s own vineyards and long term growers is hand harvested in the early hours of the morning to retain freshness and fl avour.
The Prosecco grape is whole bunch pressed to ensure the clean varietal fl avours are captured. After cold settling the juice is fermented cool in stainless steel tanks with selected yeast strains. The base wine is then blended and the secondary fermentation takes place resulting in a wine with fi ne persistent bead.
